Ingredients:

  • 300 grams ground hazelnuts
  • 250 grams unsalted butter at room temperature
  • 15 grams Stevia
  • 50 grams Whole Egg
  • (1egg)
  • 2 grams baking powder
  • 2 grams salt
  • 1 teaspoon vanilla extract
  • 140 grams whey protein powder
  • 40 grams water

Instructions

  1. Preheat your oven to 338°F (170°C).
  2. In a bowl add the butter and stevia and cream them both together until the mixture is smooth
  3. Add in the egg and continue to beat for 30 seconds or until the egg has been incorporated into the mixture.
  4. Add in the baking powder, salt, vanilla, whey powder, water and mix for 30 seconds.
  5. Add in the ground hazelnut meal in 2 stages and mix just until hazelnut batter comes together.
  6. Line a shallow baking tray (12X14in) with parchment paper.
  7. Line a cookie baking pan (12×14)
  8. Place the shortbread cookie dough onto baking pan and cover with parchment paper pressing the dough down spreading it throughout the baking tray creating an even surface about 1/4 inch thickness and place into refrigerate to 30 minutes.
  9. Remove from refrigerator and using a round cookie cutter ( 3 inch) cut individual pieces and place onto lined cookie sheet about 1 inch apart.
  10. Place into a preheated oven and bake for 15-20 minutes or until golden light brown.
