With Easter just around the corner, I can hear mommy marshmallow cake!

My daughter Camila has been reminding me to make her favorite chewy Easter rainbow rice krispie cake, so I decided to whip up a batch with her help today and share it with all of you, even though Easter is still a few weeks away.

This Easter rice crispies cake is super easy to make, all you need is, rice krispies cereal, marshmallows, butter, vanilla, food coloring, white chocolate, Easter chocolate candy eggs, and a huge hug from your kids and toddlers.
oh…by the way, just in case your wondering, yes these rice krispie cakes are safe for your toddlers to eat and more, make a great family activity for your little prince or princess to build their sensory and cognitive skills.

Ingredients To Make Easter Rainbow Rice Krispies Cake
- 6 cups rice krispies cereal (180 grams)
- 3 3/4 cups mini marshmallows (225 grams)
- 3 tablespoons unsalted butter ( or 1/4 cup or 60 grams)
- 1/2 cup white chocolate chips (85 grams)
- 3 teaspoons natural vanilla extract
- 3 icing colors from Wilton, Kelly Green, Pink Rose, and Violet (4 drops each)
- Chocolate Easter candy eggs for decorating
How To Make Easter Rainbow Rice Krispies Cake?
- Grease an 8 inch round cake pan or cover the inside and sides with plastic wrap and set aside.
- Add 2 cups of rice kripies into 3 separate medium-size bowls and set aside.
- Add 1 tablespoon of butter, 1 teaspoon vanilla extract, and 1 1/3 cup of mini marshmallows into a microwave bowl and microwave in 20-second intervals stirring in between until the marshmallows are melted.
- Once marshmallows are melted, continue to stir until smooth.
- Add to one of the rice Krispies bowls, then add 4 drops of icing color and mix until combined and rice Krispies obtain the desired color.
- Transfer the rice krispie mixture into the cake pan pressing downward and spreading the mixture evenly throughout the bottom.
- Repeat two more times following the same process with the other colors.
- When your layering is complete, place the rice krispie cake in the refrigerator for 20 minutes to allow it to set.
- Place the white chocolate chips into a microwave-safe bowl and melt using 15-second intervals stirring in between until cholate is completely melted.
- Remove the rainbow rice krispie cake from the pan and plastic, and transfer it onto a plate.
- Pour the melted white chocolate over the top.
- Decorate the sides of the cake with Easter chocolate candy eggs.
- Serve and enjoy!
