  • 450 g Butter Beans (Yellow or Beige Lima Beans)
  • 1 large ripe banana (sliced)
  • 100 grams all purpose flour
  • 1 1/2 teaspoon baking powder
  • 4 tablespoons peanut butter
  • 100 grams of sweetener
  • 50 grams whey protein vanilla
  • 1 1/2 teaspoon vanilla extract
  • 5 tablespoons avocado oil
  • 100 grams of Coconut milk or Milk
  • 60 grams Dark Chocolate, no added sugar

How To Make High Protein Sugar Free Blondies?

  • Preheat the oven to 185°C (365°F) and set the rack to the middle position.
  • Line the bottom and side of a10X10 inch square baking pan with parchment paper.
  • Add the butter beans, banana, peanut butter, coconut milk, vanilla extract, avocado oil, and eggs and blend until smooth.
  • Add in the flour, sweetener, vanilla whey powder, and baking powder and blend until batter is creamy and thick.
  • Transfer batter into the baking pan and spread it out evenly.
  • Add the chocolate chips spreading them throughout the surface.
  • Bake for 25 -30 minutes or until the top is firm. You can poke the center with a toothpick, if it comes out clean then the blondies are baked.
  • Remove from the oven and cool.
  • Cut into squares and enjoy.
