  • 2 cups diced tomatoes, fresh or canned
  • 2 1/2 cups chicken or vegetable broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup green peppers, finely chopped for garnish (optional)

  5. Remove the tomato rice from the heat and let sit for 5 minutes. Fluff the rice with a fork.
