This quintessential Portuguese pea stew also known as Ervilhas guisadas is one of our families favorite Azorean food. This Ervilhas guisadas, Portuguese pea stew recipe was shared to me by my mother law who is from Azores Portugal.

There are two traditional types of dishes for Ervilhas guisadas (Portuguese Pea Stew), the first one is Ervilhas guisadas com galinha which is referred to as pea stew with chicken and the second one is Ervilhas com ovos escalfados e chouriço (linguica), braised pea stew with eggs and chorizo.

If you wanna make Ervilhas guisadas vegan just follow the recipe and omit the chicken, choirizo and eggs and you can still enjoy the authentic taste of Portuguese braised pea stew.

What I love about the Portuguese sweet pea stew is that it’s super easy to make, with just a few ingredients, you can have rich stew that is healthy and fulfilling. If you ask what is my favorite version, I have to say Ervilhas guisaadas with poached eggs and chourico.

Ingredients For Portuguese Pea Stew With Poached Eggs and Chorizo:

  • 1 onion (medium size diced)
  • 2 tablespoon olive oil
  • 1 1/2 cup of water
  • 2 tomatoes (cubed) or 1 large can diced tomato
  • 3 garlic cloves (crushed)
  • 900 grams sweet peas ( 2 pounds or 6 cups)
  • 1 chouriço cut into rings ( Portuguese Sausage Chorizo)
  • 4 large eggs
  • 1/2 teaspoon salt
  • 2 teaspoons paprika
  • 2 tablespoon pimenta moida (Portuguese Pimento Paste) optional

How To Make Portuguese Azorean Pea Stew With Poached Eggs and Chorizo?

  1. In a large pot, add the chopped onion, tomato, olive oil, minced garlic, paprika, salt and pimenta moida and saute on medium heat, about 2-3 minutes.
  2. Reduce the heat to low and add the chouriço ( Portuguese Sausage), cook on for 10 minutes stirring occasionally.
  3. Pour in the water and sweet peas and cook for 20 minutes on medium heat or until the peas are soft and tender.
  4. Once the peas are cooked, break each egg onto the boiling stew and cook for 3-4 minutes or until the eggs are cooked.
  5. Serve and enjoy!

Ingredients For Ervilhas Guisadas Com Galinha (Portuguese Pea Stew With Chicken):

  • 1 onion (medium size diced)
  • 3 cups water
  • 4 chicken thighs
  • 2 tablespoon olive oil
  • 1 1/2 cup of water
  • 2 tomatoes (cubed) or 1 large can diced tomato
  • 3 garlic cloves (crushed)
  • 900 grams sweet peas ( 2 pounds or 6 cups)
  • 1/2 teaspoon salt
  • 2 teaspoons paprika
  • 2 tablespoon pimenta moida (Portuguese Pimento Paste) optional

How To Make Ervilhas Guisadas Com Galinha (Portuguese Pea Stew With Chicken?

  1. In a large pot, add the chopped onion, tomato, olive oil, minced garlic, paprika, salt and pimenta moida and saute on medium heat, about 2-3 minutes.
  2. Add in the chicken thighs and cook for 15 minutes stirring occasionally.
  3. Pour in the 3 cups of water and cook the chicken for about 40-45 minutes on medium heat. If needed add another 1/2 cup of water.
  4. Add in the sweet peas and cook for additional 20 minutes on medium heat or until the peas are soft and tender.
  5. Serve hot and enjoy with a slice of bread!

  • 1 onion (medium size diced)
  • 2 tablespoon olive oil
  • 1 1/2 cup of water
  • 2 tomatoes (cubed) or 1 large can diced tomato
  • 3 garlic cloves (crushed)
  • 900 grams sweet peas ( 2 pounds or 6 cups)
  • 1/2 teaspoon salt
  • 2 teaspoons paprika
  • 2 tablespoon pimenta moida (Portuguese Pimento Paste) optional

How To Make Portuguese Vegan Pea Stew?

  1. In a large pot, add the chopped onion, tomato, olive oil, minced garlic, paprika, salt and pimenta moida and saute on medium heat, about 2-3 minutes.
  2. Pour in the water and sweet peas and cook for 20 minutes on medium heat or until the peas are soft and tender.
  3. Serve and enjoy!

Instructions
 

PORTUGUESE AZOREAN PEA STEW WITH POACHED EGGS AND CHORIZO?
