Ingredients To Make Portuguese Bacalhau a Bras

  • 6 large potatoes (sliced thinely)
  • 2 Ib boneless salted cod (presoaked overnight)
  • 1 medium onion (diced)
  • 5 large eggs (beaten)
  • 4 cloves of garlic (sliced or crushed)
  • 4 bay leafs
  • 1/2 teaspoon black pepper
  • 1 bushel of fresh parsley (stems removed)
  • 1 cup black olives
  • 1/4 cup olive oil for cooking
  • Oil for frying potatoes

How To Make Bacalhau a Bras?

  1. Drain the soaked salted cod then add it to a pot and fill with water just until it covers the cod fish.
  2. Cook the cod on medium-high heat for about 10 minutes or until it softens.
  3. Allow it to cool then shred it into pieces and set it aside in a bowl.
  4. Wash and peel the potatoes, then cut them into thin strips. 
  5. Preheat a deep fryer with oil and fry the potatoes until golden in color.
  6. Add the olive oil into a deep stainless steel sauce pot, and heat the olive oil over medium heat. Once the oil is hot, add the onions and garlic and saute until slightly caramelized.
  7. Combine the shredded cod into the onions mixture along with the bay leaves and black pepper and stir together. Lower the heat to medium-low, and cook for about 5 minutes stirring once or twice.
  8. Remove the bay leaves, then add the fried potato and beaten eggs and mix together. Cook just until the eggs are cooked about 3-4 minutes.
  9. Transfer the Bacalhau a Bras into a casserole dish and top with the olives followed by the parsley.
