Ingredients For Portuguese Seafood Rice (Arroz de Marisco)
1 red or green pepper, cut into small pieces
1 medium onion, chopped
2 garlic cloves, chopped
1 large tomato, cut into small pieces
3 cups seafood broth or use water
1 cup white wine
2 cups rice (long grain)
1 teaspoon salt
2 bay leafs
Pinch of saffron
1/2 teaspoon black pepper
1 teaspoon paprika
500 grams mussels
250 grams clams
400 grams crab legs
450 grams of prawns, or shrimp
4 tablespoons olive oil
3 tablespoon butter
4 bushels of parsley for garnish
How To Make Portuguese Seafood Rice?
Place the prawns or shrimp and crab legs into a pot with water with 1 spring of parsley and a pinch of salt and bring to a boil on medium-high heat, then reduce the heat to low and cook for 3-5 minutes.
Once the crab and prawns are cooked, remove them from the pot, and allow them to cool. Remove the shell from the prawn or shrimp. Set aside.
In a large deep skillet, add the olive oil, butter, chopped onion, chopped garlic, diced tomato, and bell peppers, and cook on medium-low heat until the onions are caramelized.
Add the cup of white wine, seafood broth or water, rice, paprika, bay leaves, black pepper, salt, a pinch of saffron, mussels, clams, crab, and prawns, and bring to a boil.
Once the mixture comes to a boil, reduce the heat to low and cook for about 15-20 minutes.
Serve with fresh parsley on top.
