- 1/2 cup tapioca pearls
- 3 1/4 cups coconut milk
- pinch of salt
- pinch of anise
- 1/2 cup of sugar
- 1 1/2 teaspoons natural vanilla extract
- 1 teaspoon of cinnamon for garnishing
Instructions How To Make Vegan Tapioca Pudding:
- Add the coconut milk and salt and tapioca pearls into a medium-size bowl and cook on medium-high heat stirring occasionally until the mixture starts to thicken.
- Lower the heat to low and add in the vanilla and stir.
- Add in the sugar and anise and stir until well combined.
- Simmer for about 5 minutes stirring occasionally to prevent the tapioca from sticking to the bottom.
