Vegan Gluten Free Tapioca Pudding With Coconut Milk

- 1/2 cup tapioca pearls
- 3 1/4 cups coconut milk
- pinch of salt
- pinch of anise
- 1/2 cup of sugar
- 1 1/2 teaspoons natural vanilla extract
- 1 teaspoon of cinnamon for garnishing
Add the coconut milk and salt and tapioca pearls into a medium-size bowl and cook on medium-high heat stirring occasionally until the mixture starts to thicken.
Lower the heat to low and add in the vanilla and stir.
Add in the sugar and anise and stir until well combined.
Simmer for about 5 minutes stirring occasionally to prevent the tapioca from sticking to the bottom.
Remove from heat and place into a serving plate.
Sprinkle with cinnamon and Enjoy.
