This delicious easy to make cheesy breakfast casserole with sausage and hash browns and eggs can be made fresh or make ahead the day before and just heat up in the morning.

Cheesy breakfast casserole with sausage, eggs, and hash browns is definitely one of our family’s favorite breakfast meals. It is indulgent, healthy, and fulfilling with lots of protein and veggies. If you don’t have hash browns you can prepare this breakfast casserole with potatoes just cut them up into small cubes and your all set.

What I love most about this breakfast casserole recipe is that it can easily be adapted in so many ways by simply substituting the sausage with ham, bacon, chicken, or any type of meat, vegetables, spices, and even bread.

At least twice per month, I will make this cheesy breakfast casserole vegetarian with just vegetables, potatoes, eggs, and cheese like tomato, zucchini, mushrooms, bell peppers, and onion.

If you looking for a vegan breakfast casserole just remove all the meats, egg, and cheese and pack your casserole with lots of hash browns or fresh diced potato, vegetables, and spices and I promise it will taste amazing.

Ingredients For Breakfast Casserole With Sausage, Eggs, and Hash Browns:

  • 1 bag cubed hash brown (600 grams)
  • 1 1/2 cup cheddar cheese
  • 1 cup mozzarella cheese
  • 1 pound Italian sausage (450 grams) casings removed
  • 2 minced garlic cloves
  • 1 small yellow or red onion ( sliced into small pieces)
  • 1 green, yellow or red pepper, diced into cubes
  • 3/4 cup white mushrooms
  • 1 zucchini chopped up into small pieces
  • pinch of salt and black pepper
  •  8 eggs beaten
  • 2 tomatoes diced

How To Make Breakfast Casserole With Sausage, Eggs, and Hash Browns?

  1. Preheat oven to 190°C (375°F).
  2. In a medium-size skillet, add the sausage and cook on medium heat until browned. Remove the cooked sausage with a slotted spoon and transfer to a large bowl. Disregard half of the sausage fat in the pan.
  3. Add the mushrooms, minced garlic, onion, peppers, and zucchini into the skillet with the sausage fat and saute for a few minutes, about 4-5 minutes, or until cooked.
  4. Transfer the vegetable mixture into the sausage bowl, then add half of both kinds of cheese, hash browns, eggs, salt, diced tomato, and pepper and mix all together until combined.
  5. Pour the mixture into the casserole pan and top with the remaining cheese.
  6. Cover the casserole pan with aluminum foil and bake for about 35-40 minutes.
  7. Remove from the oven and serve.

Ingredients For Vegetarian Breakfast Casserole:

  • 1 bag cubed hash brown (600 grams) or cut potatoes
  • 2 cups mozzarella cheese or white cheddar
  • 1/2 cup feta cheese
  • 3 minced garlic cloves
  • 2 tomatoes diced
  • 1 cup baby carrots (optional) cut into rings
  • 1 medium yellow or red onion ( sliced into small pieces)
  • 2 green, yellow or red pepper, diced into cubes
  • 1 1/2 cup white mushrooms
  • 2 zucchinis chopped up into small pieces
  • pinch of salt and black pepper
  •  6 eggs beaten
  • 2 tomatoes diced
  • 1 cup olives (optional)
  • 1 tablespoon olive oil

How To Make Vegetarian Breakfast Casserole?

  1. Preheat oven to 190°C (375°F).
  2. In a medium-size skillet, add the olive oil, mushrooms, olives, minced garlic, baby carrots, onion, peppers, and zucchini and saute for 4-5 minutes, or until cooked.
  3. Transfer the cooked vegetables into a large bowl, then add half of the mozzarella cheese, feta cheese, hash browns, eggs, diced tomato, and salt and pepper and mix all together until combined.
  4. Pour the mixture into the casserole pan and cover the top with the remaining cheese.
  5. Cover the casserole pan with aluminum foil and bake for about 25-30 minutes.
  6. Remove from the oven and serve.

Options For Breakfast Casserole

  • Vegan Casserole – follow the Vegetarian breakfast casserole recipe and remove the cheese.
  • Sweet Potato Casserole – replace the hash browns with diced sweet potatoes.
  • Pizza Casserole – replace the egg with tomato sauce and add pepperoni and ham or bacon.
  • Manchego Casserole – replace the sausage, cheddar and mozzarella with manchego cheese and chicken.
  • Biscuits and Sausage Casserole – Just crumble store bought or homemade biscuits and add to the sausage bowl with desired vegetables and combine.
