Ingredients and Substitutions: Recipe Essentials

  • Granulated sugar: I used granulated sugar for this blueberry muffin recipe but you can use swap it for brown sugar or even combine both. If you prefer a less sweet muffin, you can reduce the amount of sugar used.
  • Eggs: Eggs provide structure and stability to these muffins. If you want to make this recipe vegan, you make some flax eggs, by mixing 2 tablespoons of flax meal and 6 tablespoons of hot water, mix it together and use it as a substitute for this recipe.
  • Baking powder: Baking powder is a leavening agent that helps the muffins rise. Be sure to use fresh baking powder for the best results. If you don’t have baking powder, for every 1 teaspoon replace it with 1/4 teaspoon of baking soda and 1/2 teaspoon of cream of tartar. If you don’t have the cream of tartar you can use 1/2 teaspoon of lemon or vinegar.
  • Salt: Salt is used to enhance the flavor of the muffins. You can use either regular table salt or kosher salt in this recipe.
  • Butter & Oil: For this blueberry muffin recipe I use a combination of butter and oil, the butter gives the muffins a nice flavor and the oil keeps helps to keep them, fresher, and longer. If you prefer you can use only one instead, just replace the amount with equal parts.
  • Vanilla extract: I used vanilla extract to add a special touch of flavor to the muffins. You can use either pure vanilla extract or vanilla bean paste. If you don’t have vanilla extract, you can omit it or use almond extract or blueberry extract.
  • All-purpose flour: Flour is the base of the muffins. I recommend unbleached all-purpose flour for the best results. If you want to make the recipe gluten-free, you can use a gluten-free flour blend.
  • Milk: Milk is used to moisten the muffins and give them a creamy flavor. You can use water instead or any type of milk in this recipe, such as whole milk, skim milk, nut milk, or plant-based milk.
  • Blueberries: Blueberries are the star of the muffins. Frozen or fresh blueberries can be used in this recipe. If you want to use other types of berries, such as raspberries or blackberries, you can substitute them in equal amounts.

Good To Know

  • Overmixing the batter can lead to tough, chewy, and dense muffins. Mix just until the ingredients are combined and no more flour is visible.
  • Frozen blueberries work great in this muffin recipe, but make sure to thaw and dry them before adding them to the batter to avoid the blueberries sinking to the bottom of the muffins.
  • Consistent muffin size is the key to even baking. A muffin scoop ensures that the batter is evenly divided among the cups ensuring all your muffins are baked through in the pan.
  • Gently fold in the blueberries using a spatula, this will prevent them from breaking and turning the batter blue.
  • The easiest way to check if the blueberry muffins are baked is to insert a toothpick into the center of them, if it comes out clean, the muffins are done and you are good to take them out of the oven.
  • Every oven is different, so it’s important to keep an eye on your muffins as they bake. They will be ready when they are light golden brown on top and a toothpick inserted into the middle of one of the center muffins comes out clean.
  • Let the muffins cool completely before removing them from the baking tin. This will prevent them from shrinking and breaking apart and ensure that they retain their shape.
