Ingredients For Portuguese Molotov Cake (Pudim Molotof)
- 2 cups granulated sugar (400 grams)
- 12 egg whites (350 grams)
Ingredients For The Molotf (Molotov) Caramel Sauce
- 1 1/2 cups sugar (300 grams)
- 1 tablespoon granulated sugar
How To make Portuguese Molotof Cake?
- Preheat the oven to 180°C (360°F) and grease a large bundt pan with oil or pan release spray.
- Add 1 1/2 cups of sugar followed by 1 tablespoon of water into a medium-size pot and cook until the sugar caramel sauce achieves a golden brown/ amber color.
- Carefully pour the caramel sauce into the bundt cake pan and give it a slight swirl so the caramel sauce coats the bottom. Set aside.
- Place the egg whites into a mixing bowl and beat on medium-low speed until frothy. Gradually add the sugar and increase the speed to medium-high and beat until stiff peaks are formed about 5 minutes.
- Transfer the meringue to the bundt cake pan and using a spatula and evenly smooth out the surface. gently tap the pan onto the counter to remove any air bubbles.
- Fill a larger pan with hot boiling water about 1 inch high. Place the bundt into the large pan and bake for 10 minutes without opening the oven door. Turn off the oven and allow the Molotof flan cake to cool with the oven door closed for about 20 minutes.
- Remove from the oven and turn over onto a deep cake dish while still warm.
- Allow to completely cool at room temperature then refrigerate until ready to serve.
