Ingredients For Strawberry Rhubarb Cobbler
- 1 cup all-purpose flour
- 1 stick of butter (cold cut into thin slices) about 8 tablespoons
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon (optional)
- 2 tablespoons lemon juice
- 1 1/4 cup of sugar
- 5 cups strawberries fresh or frozen (cut in half)
- 3 cups rhubarb fresh or frozen (cut into small pieces)
- 1 large egg
How To Make Strawberry Rhubarb Cobbler?
- Preheat the oven to 190°C (375°F) and set the oven rack to the middle position.
- Cut the strawberries in halves and slice the rhubarb into 1/2 inch chunks and place into a bowl. Add the lemon juice and mix it together.
- Transfer the mixed fruit into a 9X9 baking dish.
- Add the flour, cinnamon (optional), salt, sugar, and eggs and mix using your hands or with a stand mixer with the paddle attachment until a crumble consistency.
- Evenly cover the strawberry and rhubarb mixture with the crumble.
- Slice the cold butter into thin pieces and place over the crumble covering the whole top.
- Place the cobbler into the oven and bake for 40-45 minutes or until golden brown.
- Remove from the oven and serve.
