My daughter and I recently prepared a batch of this baked old-fashioned strawberry rhubarb cobbler this past weekend for her friend’s birthday party and everyone raved about it.

I’ve been making this old-fashioned strawberry rhubarb cobbler recipe from scratch for years, it’s made with fresh strawberries and rhubarb, you can easily adapt it by using any type of fruit like peach, apricot, blueberries, apple, mango, and pineapple to name a few.

If you don’t have fresh strawberries and rhubarb on hand, you can make your strawberry rhubarb cobbler with frozen fruit just make sure to thaw them before using.

This strawberry rhubarb cobbler recipe is made without oats, without cornstarch, and without brown sugar. With just a few ingredients, you’ll be making the best strawberry rhubarb cobbler.

Ingredients For Strawberry Rhubarb Cobbler

  • 1 cup all-purpose flour
  • 1 stick of butter (cold cut into thin slices) about 8 tablespoons
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)
  • 2 tablespoons lemon juice
  • 1 1/4 cup of sugar
  • 5 cups strawberries fresh or frozen (cut in half)
  • 3 cups rhubarb fresh or frozen (cut into small pieces)
  • 1 large egg

How To Make Strawberry Rhubarb Cobbler?

  • Preheat the oven to 190°C (375°F) and set the oven rack to the middle position.
  • Cut the strawberries in halves and slice the rhubarb into 1/2 inch chunks and place into a bowl. Add the lemon juice and mix it together.
  • Transfer the mixed fruit into a 9X9 baking dish.
  • Add the flour, cinnamon (optional), salt, sugar, and eggs and mix using your hands or with a stand mixer with the paddle attachment until a crumble consistency.
  • Evenly cover the strawberry and rhubarb mixture with the crumble.
  • Slice the cold butter into thin pieces and place over the crumble covering the whole top.
  • Place the cobbler into the oven and bake for 40-45 minutes or until golden brown.
  • Remove from the oven and serve.
