Ingredients For Pineapple Coleslaw:
- 1 small cabbage, shredded (about 3 cups)
- 1/4 small red cabbage, shredded (about 1/2 cup)
- 1 cup mayonnaise (optional)
- 1/2 teaspoon salt
- 3 tablespoons vinegar
- 2 tablespoons sugar or 1 tablespoon sweetener
- 1/2 cup pineapple crushed, drained
- 2 tablespoon cilantro (finely chopped)
- 1/4 teaspoon ground black pepper (optional)
How To make Pineapple Coleslaw:
- In a large bowl, combine both cabbages and carrots.
- In a separate bowl, add the mayonnaise, sugar, salt, black pepper and cilantro.
- Mix together to combine.
- Add mayo mixture to cabbage slaw and toss and mix together until well combined.
- Add into the slaw the crushed pineapple and cilantro and gently toss the mixture to combine.
- Place into refrigerator and chill for about 30 minutes before serving.
How Long Will Pineapple Coleslaw Keep?
