Easy Ecuadorian Mote Pillo Recipe ( Scrambled Eggs and Hominy Corn Recipe) is a traditional Ecuadorian breakfast or brunch dish.
Ingredients
- 450 grams canned Mote (1 lb) canned mote (2 small cans)
- 45 grams butter (3 tbs) or 30 grams Lard 2 tablespoons
- 250 grams Eggs (5 large eggs)
- 2 grams powdered cumin (1/2 teaspoon)
- 100 grams leeks (1/2 cup)
- 4 grams Garlic Powder (1 teaspoon)
- 2 grams ground achiote (1/2 teaspoon)
- 60 ml Water ( 4 tablespoons)
- Pinch of Salt
Instructions
In a large skillet, add the butter or lard, water, chopped leeks, achiote paste, salt and garlic powder and cook until leeks have soften. over medium heat.
Add in the Mote and stir cooking for about 3-4 minutes or until the mote absorbs the water.
Add the eggs and to the Mote mixture, stir constantly with a spatula until eggs are well cooked and scrambled.
Serve with fresh cheese and black coffee.
