  • 2 medium zucchinis, diced into 1-inch cubes
  • 4 cloves of garlic, minced
  • 4 vine-ripened tomatoes, diced
  • 1/4 cup of extra-virgin olive oil
  • 2 tablespoons of fresh basil, chopped
  • 2 tablespoons of fresh thyme leaves
  • Salt and freshly ground black pepper, to taste

How To Make Traditional French Ratatouille?

  1. Start by preparing all of your vegetables, thoroughly washing them, then dice them into 1-inch cubes. If you prefer you can peel your tomatoes but for this recipe, I added mine unpeeled.
  2. In a large skillet, heat the extra-virgin olive oil over medium heat.
  3. Once the oil is hot, add the eggplant, bell peppers, onions, and zucchini. Cook for 10 minutes or until the vegetables are tender, stirring occasionally.
  4. Next, add the minced garlic to the skillet and continue to cook for an additional 2 minutes.
  5. Stir in the diced tomatoes, chopped basil, and thyme leaves. Season with salt and freshly ground black pepper to taste.
  6. Reduce the heat to low, cover the skillet, and simmer for 20 minutes, allowing the flavors to blend together.
  7. Serve the ratatouille as a side dish, or over pasta, rice, or bread. You can also enjoy it cold as a salad.
