This healthy chicken stock is simple to prepare and can be frozen for 3 months. A simple gelatinous healthy chicken stock recipe full of flavor that can be used for a variety of soup making. In this recipe, we are using chicken carcass but if you prefer you can use chicken breast or any other pieces of chicken including leftover chicken or rotisserie chicken.
If your tight on time and need to prepare a chicken broth or chicken stock fast you can do so by using a microwave. Add the chicken carcass broken into pieces or chicken breast, water, vegetables, and spices and cover with plastic wrap leaving one end of the uncovered to allow steam to escape and microwave for 30 minutes. Ladle the mixture through a sieve into a bowl, cool then transfer to a jar or container.
The main difference between chicken stock and chicken broth is that the chicken stock is made by using the chicken carcass (boney parts) which has a richer and fuller flavor due to the gelatin that is released during the slow cooking process. The chicken broth which is made using chicken meat has less flavor and is more liquidy compared to the chicken stock.
You can easily prepare a chicken broth or chicken stock by substituting the chicken meat or chicken carcass with bouillion chicken cubes. Dissolve 2 bouillion chicken cubes in 4 cubes of boiling water and you’re done. Cool broth and store in a container.
