This is the absolute best recipe for cornmeal griddle cakes I’ve ever had! These simple cornmeal griddle cakes are super easy and quick to make and literally melt in your mouth. Made with wholesome ingredients, this simple cornmeal griddle cake recipe is made with buttermilk, cornmeal, flour, butter, eggs, salt, baking powder, and some sugar.

So moist, light, and airy, I should have named them souffle cornmeal griddle cakes. The texture is very similar to souffle pancakes but slightly denser due to the addition of cornmeal.

These easy cornmeal griddle cakes are a delicious and satisfying breakfast. While they’re great for breakfast, these griddle cakes are also a wonderful addition to your summer picnics or even barbecues.

I love to serve these hot cakes with butter, honey, or with maple syrup along with bacon, eggs, and sausage as a side. Ingredients For Cornmeal Griddle Cakes

  • 1 cup flour (125 grams)
  • 1 cup cornmeal (170 grams)
  • 1 teaspoon baking powder (5 grams)
  • 2 tablespoon butter (30 grams)
  • 1/2 teaspoon baking soda (2.5 grams)
  • 2 1/4 cups buttermilk, or any milk (300 grams)
  • 2 large eggs, separate the yolks and whites (100 grams)
  • 1 teaspoon salt (5 grams)
  • 2 tablespoons melted butter

How To Make Cornmeal Griddle Cakes?

  1. Add the egg whites into a bowl and beat on medium-high until stiff peaks form and set aside.
  2. Sift together the flour, salt, baking soda, and baking powder into a bowl, then add the cornmeal and sugar and mix to combine with a whisk. and set aside.
  3. Melt the butter for a few seconds in the microwave or in a small pot.
  4. Beat the egg yolks on medium-high for 2 minutes. Add the buttermilk and beat on low until combined, about 1 minute.
  5. Add the flour mixture and beat until the batter is smooth. If you notice the batter is too thick add a little more buttermilk.
  6. Stir in the melted butter with a spatula, then gently fold in beaten egg whites in portions until the batter is well combined.
  7. Preheat the griddle to a medium-high setting.
  8. Spoon dollops of batter onto a hot griddle and bake each side for a few minutes or until each side is golden light brown in color. This batter should be enough to make twelve 4 inch cornmeal griddle cakes.
  9. Serve warm and enjoy!
