Recipes made with Spelt flour have an excellent source of protein, minerals, vitamins and dietary fiber compared to regular wheat flour. This special ancient grain loves water and is more soluble compared to wheat, aiding and promoting better digestibility.

Ingredients need to make your Spelt Scones in Grams:

  • 130 grams (1 cup) whole spelt flour
  • 80 grams (1⁄2 cup) light spelt flour
  • 45 ml (2/1/2 tablespoons Almond Milk
  • 8 grams (2 teaspoons) baking powder
  • 2 grams (1/2 teaspoon) salt
  • 50 grams ((1⁄4 cup) coconut sugar
  • 100 grams Almond butter or vegan margarine
  • 30 ml orange juice 2 tablespoons
  • 4 grams ( 1 teaspoon) orange zest
  • 60 grams ( 4 tablespoons) agave or maple syrup
  • 60 grams confectioners sugar
  • 15 tablespoon rose water
  • 45 grams vegan chocolate chips

Ingredients for Spelt Scone in Volume Measurements:

  • 1 cup whole spelt flour
  • 1⁄2 cup light spelt flour
  • 2 1/2 tablespoons Almond Milk
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1⁄4 cup coconut sugar
  • 100 grams Almond butter or vegan margarine
  • 2 tablespoons orange juice
  • 1 teaspoon orange zest
  • 4 tablespoons agave or maple syrup
  • 1⁄2 confectioners sugar
  • 1 tablespoon rose water
  • 2 1/2 tablespoon vegan chocolate chips
  1. Instructions:
  2. Preheat your oven to 400°F (200°C)
  3. Prepare your baking tray by lining it with parchment or silpats
  4. In a mixing bowl add both spelt flours, baking powder and salt a mix with a paddle attachment for one minute.You can also use a hand mixer or food processor.
  5. Add the almond butter or margarine and mix just until a crumble is formed. (BREADCRUMB CONSISTENCY)
  6. Add in the the almond milk, orange juice and agave syrup and mix just until scone dough come together about 1 minute. Add more almond milk if needed.
  7. Add in the orange zest along with the vegan chocolate chips and mix for about 10 seconds.
  8. Flour working surface and place scone dough on top and flatten it to about 1/4 inch thickness.
  9. Cut into rounds using 2 inch cookie cutter or triangle by flattening the whole dough into a round shape followed by cutting them into triangle forms.
  10. place pieces onto lined baking tray and bake for 15 minutes or until lightly golden color.
  11. In the meantime prepare the icing glaze.
  12. Place the confectioners sugar in a bowl along with the water and using a whisk mix the mixture together until the frosting is nice and smooth and set aside.
  13. Once the scone are baked let them cool on a wired rack for about 20 minute before decorating with the icing.

    I just made this recipe and it was great! The coconut sugar in the ingredient list doesn’t show up in the instructions – I improvised and added it with the other dry ingredients 🙂
