Ingredients For Homemade Mexican Flour Tortilla With No Lard:
3 cups bread flour or all-purpose flour (360 grams)
3/4 cup warm water (180 grams)
3 tablespoon margarine, butter, oil, or shortening room temperature (45 grams)
1 teaspoon salt (6 grams)
1 teaspoon baking powder (6 grams)
How To Make Homemade Mexican Flour Tortillas?
Mixing with mixer: Add the flour, baking powder, salt, water, and margarine or any of the above fat substitutes into a mixing bowl with a hook attachment and mix on slow speed for about 3 minutes.
Increase the speed to a medium setting and continue to mix the dough until it’s smooth. Cover the dough and rest for 10 minutes.
Mixing by Hand: Add the flour into a medium-size bowl and create a well in the center. Add in the rest of the ingredients except the fat.
Mix the flour into the center until it absorbs all the water and the dough starts to come together.
Add half of the fat and mix it into the dough, once it’s incorporated, add the remaining fat and continue to mix.
Using your hand, continue to knead the dough by folding over the outer part of the dough onto the opposite side. Continue to knead and fold the dough rotating it for about 10 minutes until the tortilla dough is smooth and soft. Cover and rest for 15 minutes.
Transfer the dough onto a lightly floured working surface and cut into 12 equal parts. Slight round each divided dough piece, cover, and set aside for another 10 minutes.
Using a rolling pin, lightly dust each dough piece with flour and roll out to 6 inches, about 2mm to 3mm in thickness.
Heat a nonstick skillet on medium-high, add the tortilla and cook until you see bubbles forming on the surface, about 45-60 seconds. Flip and repeat with the other side.
Remove the cooked tortilla and place onto a plate and cover, repeat with the remaining doughs.
