Ingredients For Eggless Vegan Banana Bread With Oil
- 1 1/4 cups all-purpose flour or pastry flour ( 180 grams)
- 1/4 teaspoon of salt (1.5 grams)
- 1/2 cup canola or vegetable oil (110 grams)
- 1 1/2 teaspoon baking powder (6 grams)
- 1/2 teaspoon baking soda ( 2.5 grams)
- 1 cup sugar ( 200 grams)
- 2 large bananas ripe and mashed (about 1 1/2 cups)
- 1/2 cup vegan yogurt, I use soy milk yogurt (120 grams)
- 1 1/2 teaspoon vanilla extract (6 grams)
- 1/2 cup walnuts, chopped ( 50 grams) optional
- 1 small banana sliced lengthwise for decoration (optional)
How To Make Vegan Banana Loaf Bread?
- Preheat the oven to 175°C about 350°F. and set the rack to the middle position.
- Grease or line an 8X3 baking pan, the height should be about 3 inches.
- Add the flour, salt, baking, powder, and soda into a bowl and whisk together to combine.
- Whisk the flour, baking soda, and salt together in a medium bowl.
- In another bowl combine the mashed bananas, walnuts, vegan yogurt, sugar, oil, and vanilla extract, and mix to combine using a whisk or spatula.
- Add the bananas mixture in portions to the flour mixture and mix using a spatula until both mixtures are combined.
- Pour the batter into the baking pan, then place the sliced banana onto the top.
- Bake for approximately 50-60 minutes or until an inserted pick comes out clean. If you have a thermometer, insert it into the cake, if the internal temperature reaches 200°F ( 94°C) or above then the banana loaf cake is fully baked.
- Remove from the oven and cool in the pan for 15 minutes and remove and continue to cool on a wire rack for 40 minutes.
