Easy Tejeringos Recipe (Jeringas)

Tejeringos are crispy fried pastry dough that is Native to Grenada, Malaga, and Cádiz. Our easy tejeringos recipe (Jeringas) is a type of churro prepared similar to a porra, this means that it is leavened without commercial yeast. Tejeringo is usually shaped into a round shape.
INGREDIENTS FOR TEJERINGOS:
- 10 tablespoon Unsalted Butter
- 1 1/4 cup of All Purpose Flour
- 2 tablespoon Sugar
- 1/2 cup sugar for coating
- Pinch of Salt
- 4 Large Eggs
- 6 cups Canola oil for deep-frying
INSTRUCTIONS HOW TO MAKE TEJERINGOS:
- Combine 1 cup water, the butter, sugar, and salt in a small heavy saucepan and bring to a boil, stirring occasionally until the butter melts.
- Turn the heat to low, add the flour at once and stir vigorously until the dough forms a ball.
- Remove from the heat and add the eggs one at a time, constantly stirring.
- Transfer to a bowl and allow the batter to rest for 15 minutes at room temperature.
- Meanwhile, add the oil and heat in a deep fryer or pot.
- Transfer the dough to a pastry bag fitted with a large star tip.
- Pipe 4-inches-long strips of dough into the hot oil and cook for 2 to 3 minutes each side, or until light golden brown.
- Transfer to plate with paper towels.
- Repeat until batter is done.
- Coat with sugar and serve.
