Easy Tejeringos Recipe (Jeringas)

Tejeringos are crispy fried pastry dough that is Native to Grenada, Malaga, and Cádiz. Our easy tejeringos recipe (Jeringas) is a type of churro prepared similar to a porra, this means that it is leavened without commercial yeast. Tejeringo is usually shaped into a round shape.

INGREDIENTS  FOR TEJERINGOS:

  • 10 tablespoon Unsalted Butter 
  • 1 1/4 cup of All Purpose Flour
  • 2 tablespoon Sugar
  • 1/2 cup sugar for coating
  • Pinch of Salt
  • 4 Large Eggs
  • 6 cups Canola oil for deep-frying

INSTRUCTIONS HOW TO MAKE TEJERINGOS:

  1. Combine 1 cup water, the butter, sugar, and salt in a small heavy saucepan and bring to a boil, stirring occasionally until the butter melts.
  2. Turn the heat to low, add the flour at once and stir vigorously until the dough forms a ball.
  3. Remove from the heat and add the eggs one at a time, constantly stirring.
  4. Transfer to a bowl and allow the batter to rest for 15 minutes at room temperature.
  5. Meanwhile, add the oil and heat in a deep fryer or pot.
  6. Transfer the dough to a pastry bag fitted with a large star tip.
  7. Pipe 4-inches-long strips of dough into the hot oil and cook for 2 to 3 minutes each side, or until light golden brown.
  8. Transfer to plate with paper towels.
  9. Repeat until batter is done.
  10. Coat with sugar and serve.
