INGREDIENTS CALAMARI:

  • 1 bag frozen squid rings 450 grams
  • 1 1/2 cup of flour
  • 1/2 teaspoon salt
  • 3/4 teaspoon baking powder
  • 1 cup almond milk or coconut milk
  • 1/2 teaspoon paprika
  • 1/2 teaspoon white pepper
  • 1 teaspoon garlic powder
  • 2-3 cups of canola or corn oil for frying
  • Lemon wedges for serving

INGREDIENTS FOR SPICY CUCUMBER SAUCE:

Cucumber Sauce

  • 1/2 cup cucumber (120 grams) chopped
  • 1/2 teaspoon dill
  • 1/2 teaspoon black pepper powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon mustard
  • 1/4 cup yellow sweet onion, finely chopped
  • I small red chill chopped up finely (1 teaspoon)
  • 1/2 cup mayonnaise (100 grams)
  • 1/2 cup sour cream or plain yogurt (120 grams)
  • pinch of salt

INSTRUCTIONS HOW TO MAKE SPICY CUCUMBER DIPPING SAUCE:

  1. Add the cucumber, onion, chill peppers, salt, dill, garlic, and black pepper powder into a food processor or blender and pulse 4-5 times.
  2. Add in the mayonnaise and sour cream and pulse until mixture is creamy.
  3. Transfer cucumber sauce to a plate or container and refrigerate until ready to use. Will keep well refrigerated for about a week.

INSTRUCTIONS FOR HOW TO MAKE CALAMARI:

  1. Wash and the squid and add it to a medium-size bowl.
  2. Add the almond milk and let it soak for 60 minutes.
  3. Add the dry ingredients into a different bowl and mix it all together.
  4. Add the oil to a deep frying pan or wok and heat over medium-high.
  5. Coat and toss the squid into the flour mixture, if you wanna a thicker crust then repeat the process.
  6. Place the coated squid into a deep fryer and fry each one for about 3-4 minutes or until the squid is light golden in color.
  7. With a slotted spoon, removed and transfer the cooked calamari onto a plate lined with paper towels.
  8. Repeat until all the calamari is all fried.
  9. Serve with a salad, sliced lemon, and spicy cucumber sauce.
