Ingredients For Swiss Meringue:

  • 6 egg whites from large eggs room temperature( 120 grams)
  • 1 cup granulated sugar plus 1 tablespoon (115 grams)
  • 3/4 teaspoon vanilla extract ( 3 grams)
  • pinch of salt

How To Make Swiss Meringue?

  1. Add the egg whites, salt, sugar, and vanilla extract into a medium-size bowl and mix together until well-combined.
  2. Add water to a medium-size pot and bring it to a simmer.
  3. Place the egg mixture bowl over the water pot and heat until the temperature reaches 160°F (70°C) whisking constantly.
  4. Transfer the egg mixture into a mixing bowl with a whisk attachment and whip on high speed until medium-stiff peak consistency and meringue has cooled to room temperature.
  5. Keep covered and refrigerated until ready to use.
