Dark Chocolate Chip Zucchini Oatmeal Muffins Recipe

Ingredients For Dark Chocolate Chip Zucchini Oatmeal Muffins
- 400 grams rolled oats (5 cups)
- 60 grams butter (melted) or use oil (1/2 cup)
- 150 grams eggs (3 large eggs)
- 3 grams salt ( 1/2 teaspoon)
- 220 grams shredded zucchini (11/2 cup)
- 12 grams baking powder (3 teaspoons)
- 115 grams honey or maple syrup ( 1/3 cup)
- 40 grams unsweetened dark chocolate chips (1/4 cup)
How To Make Dark Chocolate Chip Zucchini Oatmeal Muffins?
- Preheat the oven to 175°C (350°F) and grease or line muffin pan with muffin liners.
- Rinse and wash the Zucchini then grate it.
- Grind half of the oats using a food processor or blender.
- In a bowl, combine the grinded oatmeal flour, remaining oats, salt and baking powder and whisk togther.
- Add the honey or maple syrup and melted butter or oil, and mix to combine using a saptula, then add the zuchinni and chocolate chip and fold into the batter.
- Fill the muffin cups with the batter just to under the rim.
- Place into oven and bake for 25-30 minutes.
- Remove the zucchini oatmeal muffins from the oven, allow to cool in the muffin pan for five minutes then remove.
- Place them on a wired rack and completely cool.
- Enjoy!
