INGREDIENTS

  • 225 grams penne pasta (durum wheat, wholegrain or gluten free)
  • 450 grams skinless and boneless chicken breast (1Ib)
  • 3 tablespoons unsalted butter
  • 1 teaspoon garlic powder
  • 1/2 teaspoon blackpepper (optional)
  • 1 cup chicken broth
  • 1 cup milk
  • 1/2 cup water
  • 1 cup mushrooms
  • 1 cup kale (chopped) or spinach
  • 1/3 cup parmesan cheese
  • 100 grams cream cheese 

How To Make Creamy Creamy One Pot Pasta With Chiciken and Mushrooms?

  1. Prepare the chicken breast by cutting it into small bite size peices about 1 inch and set aside.
  2. Add the butter into a pot or skillet and melt over medium low heat.
  3. Once butter is melted, add the cut chicken breast and cook on medium heat until the chicken begins to brown along the sides.
  4. Add the salt, black pepper and garlic powder and stir, cook for about 3 minutes.
  5. Pour in the chicken broth, water and add the pasta, stir the mixture and increase the temperature to medium high and cook until it comes to a boil stirring occasionally, then reduce the heat back to medium and allow the pasta to simmer for about 12 minutes or until the pasta is soft and cooked and has absorbed most of the broth and water.
  6. Once the pasta is cooked, add the mushrooms, kale, cream cheese, parmesan and milk and cook on medium low heat stirring the pasta until the cream cheese has melted about 3-4 minutes.
