Ingredients For Vegan Sour Cream (Coconut Milk):

  • 180 grams coconut milk (3/4 can, chilled at least 2 hours in advance)
  • 60 grams oat milk or almond milk (4 tablespoons)
  • 12 grams apple cider vinegar (3 teaspoons)
  • 30 grams freshly squeezed lemon (2 tablespoons)

Instructions For Vegan Sour Cream:

  1. Place the can of coconut milk in the refrigerate for at least two hours or freeze for 1 hour before preparing the sour cream.
  2. With a can oper open the can and drain the liquid portion of the coconut milk into a cup. You can add this to cereal, smoothies or your cooking.
  3. Remove the thick cream into a bowl and add the oat milk and mix together with a spoon or spatula.
  4. Add the lemon juice and apple cider vinegar slowly while stirring the mixture together. Continue to mix until the coconut sour cream is well combined.
  5. Taste to see if you want it more sour. To make your coconut sour cream more sour just add another teaspoon of freshly squeezed lemon juice and mix well.
  6. Cover with cling wrap and refrigerator for at least one hour before using.
  7. For storage, transfer to an air tight jar and keep refrigerated.
