Ingredients For Vegan Passionfruit Cookies

  • 1 1/4 cup passion fruit flour
  • 1 1/4 cup sprouted wholegrain flour or use regular wholegrain or wheat wheat flour
  • 1/2 cup coconut sugar
  • 3 tablespoon passion fruit juice
  • 4 tablespoon cocount oil
  • 3/4 cups coconut milk
  • 3/4 teaspoon cocoa powder
  • 1/4 teaspoon cinnamon

How To Make Healthy Passionfruit Cookies?

  1.  Preheat the oven to 180°C (350°F) and line a baking sheet with parachment paper.
  2. Combine all the ingredients into a bowl and using a spatula or a handmixer or planetary mixer, mix togther just until the cookie dough comes togther and your able to form a ball using your hands.
  3. Once the cookie dough is developed, transfer it onto a flour work surface, dust with some flour and roll out using a rolling pin to about 1/2 inch in thichness.
  4. Using a round cookie cutter, cut of pieces of cookies and place onto the lined baking sheet spacing them about 2 inches apart from each other. Depending on the size of your baking sheet, you might need to bake twice.
  5.  Bake for about 15-18 minutes or until the edges are golden brown.
  6. Remove from oven and allow to cool on the baking tray for about 5 minutes before transfering them onto a cooling wire rack. Allow passionfruit cookies to completely cool before serving.
  7. You can keep your cookies stored in a covered container at ambiante temperature for up to one week.
