The Tinga was invented by the Pueblan people and instantly became a hit with its combination of Mexican and European spices and cooking techniques that were brought by the Spaniards.

Original authentic Mexican Tinga is made using chicken breast, but today it’s made with a variety of meats, minced meat, beef, pork, ground beef, and even chorizo. This version of tinga is made with minced ground beef that is slow-cooked in a mixture of tomato sauce, which is made with tomatoes, onions, garlic, spices, and chipotle peppers.

What Are CHILE CHIPOTLE? 

Chile Chipotle is hot jalapeno peppers, the chiles are picked when they are fully ripped and red in color. The pepper is sun-dried using the traditional method and then smoked. Once dried the chipotle peppers are reconstituted and picked in vinegar and adobo sauce then seasoned with spices. They are then preserved in jars and used as needed.

Ingredients To Make Tinga With Ground Beef

  • 1 1/2 Ibs ground beef
  • 3 garlic cloves
  • 2 large onions (diced)
  • 3 chipotle peppers
  • 4 large tomatoes
  • 3 teaspoons oregano
  • 2 bay leafs
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika (sweet or hot)
  • 1/2 cup oil (divided)
  • 1 teaspoon salt (divided)
  • 10 Corn Tortillas or use Wheat Tortillas

Garnish For Mexican Tinga

  • 1/2 cup corn kernels
  • 1 small tomato (diced)
  • 1/2 cilantro (chopped)
  • 1 jalapeno pepper (sliced into rings)
  • 1 lime (cut into quarters)
  • 1 small red onion (sliced)

How To Make Mexican Ground Beef Tingas?

  1. Add the ground beef into a bowl and season with salt, paprika, and black pepper. Set aside.
  2. Place the tomatoes into a pot with water and bring to a boil for about 15 minutes.
  3. In the meantime, add the oil to a deep frying pan or skillet, add the onions and cook until they are translucent about 5 minutes. Set aside.
  4. Prepare the meat: Add oil and ground beef into a frying pan or pot and heat on a medium setting cooking it until nicely browned stirring occasionally for about 15 minutes. Keep aside.
  5. Transfer the tomatoes into a blender, add the garlic, salt, and chipotle pepper, and puree until saucy consistency.
  6. Pour the tomato mixture into the sauteed onion pan, add the cooked ground beef, oregano, and bay leaf, and stir. Cook for 15 minutes on medium-low heat.
  7. Serve with toasted corn or wheat tortillas, garnished with diced tomato, red onion, sliced jalapeno peppers, corn kernels, and cilantro, and drizzled with fresh lime juice.
