This is an easy recipe for a traditional Portuguese seafood rice stew known as arroz de marisco. Ingredients For Portuguese Seafood Rice (Arroz de Marisco)

  • 1 red or green pepper, cut into small pieces
  • 1 medium onion, chopped
  • 2 garlic cloves, chopped
  • 1 large tomato, cut into small pieces
  • 3 cups seafood broth or use water
  • 1 cup white wine
  • 2 cups rice (long grain)
  • 1 teaspoon salt
  • 2 bay leafs
  • Pinch of saffron
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 500 grams mussels
  • 250 grams clams
  • 400 grams crab legs
  • 450 grams of prawns, or shrimp
  • 4 tablespoons olive oil
  • 3 tablespoon butter
  • 4 bushels of parsley for garnish

How To Make Portuguese Seafood Rice?

  1. Place the prawns or shrimp and crab legs into a pot with water with 1 spring of parsley and a pinch of salt and bring to a boil on medium-high heat, then reduce the heat to low and cook for 3-5 minutes.
  2. Once the crab and prawns are cooked, remove them from the pot, and allow them to cool. Remove the shell from the prawn or shrimp. Set aside.
  3. In a large deep skillet, add the olive oil, butter, chopped onion, chopped garlic, diced tomato, and bell peppers, and cook on medium-low heat until the onions are caramelized.
  4. Add the cup of white wine, seafood broth or water, rice, paprika, bay leaves, black pepper, salt, a pinch of saffron, mussels, clams, crab, and prawns, and bring to a boil.
  5. Once the mixture comes to a boil, reduce the heat to low and cook for about 15-20 minutes.
  6. Serve with fresh parsley on top.
