This is the perfect Pink Diva Easy Strawberry Filled Pop Tart Recipe. Flaky crumbly pastry filled with a sweet and tarty strawberry filling and finished off with a pink icing, your little divas will love them. I’ve been making these with my 5 year old princess since she is 2 years old and have mastered my diva strawberry pop tart recipe and I am now sharing it with you.

Pop tarts are fun to make with your kids, help build creativity and strengthens their cognitive skills. Create long life memories that will remain with them for ever. Wait a minute, what if you don’t have kids, well there’s a kid in all of us, let yours out. Baking and cooking is sensational, and whats more sensational are these yummy colorful strawberry pop tarts.

Let’s get to it….Gimme Yummy Pop Tart Recipe:

Flaky PASTRY RECIPE:

  • 2 cups (240 grams) all-purpose flour
  • 1 teaspoon salt
  • 3 teaspoons granulated sugar
  • 1 cup ( 225 grams) unsalted butter cut into cubes and chilled
  • 1 large egg (50 grams)
  • 7 teaspoons (35 grams) buttermilk

STRAWBERRY FILLING

  • 3/4 cup of Strawberry jam

CREAM CHEESE ICING:

1 cup ( 100 grams) icing sugar

2 Tablespoons ( 20 grams) cream cheese

20 grams lemon juice or squeeze half a lemon

A couple of drops of red food coloring

INSTRUCTIONS

Preheat your oven to 350F

  1. In a mixing bowl, add the flour, salt and sugar and mix using a paddle attachment to combine for about a minute.
  2. Add in the cubed butter and mix until a pea size crumble is formed. If you don’t have a mixing machine yo can use a food processor, just follow the same steps.
  3. In an other bowl, add the eggs and milk and mix them together for about a minutes or so or until you see the dough forming and pulling away from the sides of the bowl.
  4. Remove dough and place on lightly floured working surface.
  5. Separate the dough in half and sheet down dough using a rolling pin to approximately 3mm or 10X12 rectangle
  6. Using a pizza cutter or knife cut out each piece by 3X4 inch rectangles.
  7. Brush the edges around rectangular pastry dough with water, this will help seal the edges of the pop tarts.
  8. Fill one half with a dollop of strawberry jam and spread throughout avoiding the edges of the pastry.
  9. Now place the other half onto the filled pastry and using a fork pinch the edges together.
  10. Place onto parchment lined baking and bake for about 13-15 minutes or until lightly golden brown.
  11. Once baked remove from oven and let them cool for 30 minutes before applying the frosting.

FOR THE FROSTING

  1. In a bowl add the icing sugar, cream cheese, lemon juice and red food coloring and mix until smooth texture is achieved.
  2. Add the frosting to the top of each pop tart.
  3. Serve and enjoy!!

Keep in mind: You can add essentially any type of filling you like blueberry, raspberry, chocolate, vanilla etc.
