  • 15 grams Baking Powder
  • 150 grams Sugar 
  • 6 grams Salt
  • 2 grams Allspice
  • 400 grams Raisins

  • 4.67 cups Plain Flour
  • 1/2 cup milk
  • 1.33 cups Unsalted Butter
  • 3 tsp Baking Powder
  • 3/4 cup Sugar 
  • 1 teaspoon salt
  • 1 tsp Allspice
  • 2.67 cups Raisins

How To Make Old Fashioned British Rock Cakes?

  1. Preheat oven to 200°C (392°F) and set rack into the middle position.
  2. Line two baking sheets with parachment and set aside.
  3. Place all the dry ingredients into the mixing bowl and whisk together.
  4. Add the butter and rub it into the dry ingredient mixture until a crumb like consistency is developed.
  5. Toss in the raisins and mix untill well combined.
  6. Add the milk and mix together using a spatula or fork just until the mixture comes together. If you find the mixture a bit dry, add another tablespoon or two of milk.
  7. Spoon dollops of the cake batter onto baking tray separting them apart about 1 1/2 inch.
  8. Bake one tray at a time, Place into oven and bake for 15-18 minutes or until golden brown.
  9. Cool rock cakes before serving.
  10. Optional, sprinkle some sugar onto top or dust with icing sugar.
