Ingredients For Gluten-Free Peanut Butter Oat Bars

  • 1/2 cup butter (113g)
  • 2/3 cup brown sugar (135g)
  • 1 tablespoon honey (20 grams)
  • 1 teaspoon vanilla extract (5 grams)
  • 4 cups gluten-free quick oats (400g)
  • 1 cup semi-sweet chocolate chips (175g)
  • 1 cup butterscotch chips (175g)
  • 1 cup smooth peanut butter (270g)

How To Make Gluten-Free Peanut Butter Oat Bars?

  1. Put the butter, honey, and the brown sugar in a medium-sized saucepan or pot.
  2. Melt the butter completely and let this mixture cook on medium heat for a few minutes.
  3. Add the vanilla extract and mix together with a whisk.
  4. Add 4 cups of gluten-free quick oats and mix until all the oats are coated.
  5. Pour the mixture into a greased 9″x13″ baking pan.
  6. Using the back of a spoon or spatula, press downward and evenly flattens the oat mixture and set aside.
  7. In a medium-sized saucepan, combine the peanut butter, semi-sweet chocolate chips, and butterscotch chips and melt together stirring to combine the mixture.
  8. Pour the peanut butter creamy sauce over the oats in the baking pan.
  9. Let cool completely before cutting into bars.
