250 grams of all-purpose flour (1 cup)

375 grams buttermilk or milk ( 1 1/2 cups)

4 grams vanilla extract ( 1 teaspoon)

100 grams of eggs (2 large eggs)

16 grams of sugar ( 1 tablespoon)

16 grams brown sugar (1 tablespoon)

2 grams salt (1/2 teaspoon)

24 grams melted unsalted butter (1 1/2 tablespoon)

Instructions

  1. In a medium size bowl sift the all purpose flour.
  2. Add the eggs, granulated sugar, brown sugar, salt, vanilla extract, melted butter and buttermilk and mix using a whisk until batter is well combined and bubbles start to form at the surface. Batter should look like cream consistency. You can also use a stand mixer with whisk attachment or hand mixer.
  3. Preheat your 8 inch skillet on medium heat. The idea temperature for cooking crepes is 400˚F (205˚C) Once skillet is hot spray pan release or brush with butter.
  4. Pour 2 tablespoons (30 grams) of the crepe batter into the center of the skillet and tilt in a circular motion allow the batter to spread onto the whole base of the skillet.
  5. As the edges start to slightly brown and peel off the side of the skillet, flip with a spatula and cook the other side. ( About 15-20 seconds)
  6. Once cooked remove from skillet and place onto plate covered to be warm.
  7. Repeat until the rest of batter is finished.
  8. Drizzle your favorite syrup, chocolate. Sprinkle some icing sugar and top with whipped cream, ice cream and fresh fruits. Go wild and get creative.
