Ingredients For Portuguese Coconut Macaroon (Coquinhos) in Grams:
- 200 grams unsweetened desiccated coconut
- 150 grams granulated sugar
- 90 grams egg yolk
- 60 grams whole egg
INGREDIENTS FOR PORTUGUESE COCONUT MACAROON (COQUINHOS) IN IMPERIAL UNITS:
- 2 cups unsweetened desiccated coconut
- 3/4 cup granulated sugar
- 5 egg yolks
- 1 large whole egg
Preheat the oven to 175 ºC (350 ºF).
Place small muffin cups into a muffin pan, if you don’t have muffin cups or muffin pan, line a baking tray with parchment paper and set aside.
In a medium-size bowl add the coconut, whole egg, egg yolks, and sugar and mix together using your fingers or spatula until the mixture is well combined.
You can fill a piping bag using a star tip with the coconut macaroon mixture and pipe into each muffin cup or drop dollops of coconut mixture using a tablespoon. If you're using parchment paper instead, spread apart the mixture from each dollop about 1 1/2 inch.
Place into the preheated oven and bake for approximately 15-20 minutes or until the tips and side of the coconut macaron start to caramelize.
Remove from oven, cool and serve.
