Ingredients For Gluten-Free Brazilian Cheese Bread Recipe (Pão de Queijo)

  • 1 1/2 cups (180 grams) tapioca flour (or Cassava Flour)
  • 1/2 teaspoon salt (2 grams)
  • 1/2 cup shredded mozzarella cheese (or any fresh cheese)
  • 1 large egg ( 50grams) room temperature
  • 1/4 cup olive oil ( 55 grams) or vegeatable oil
  • 1/2 cup milk (120 grams)
  • 1/4 cup water (60 grams)

How To Make Brazilian Cheese Bread?

  1. Preheat the oven to  200°C (395°) and spray a mini muffin pan with cooking spray or add mini muffin liners.
  2. Add the eggs, tapioca flour, milk, water, salt, olive oil and grated cheese into a blender and pulse until the batter is smooth.
  3. Fill each muffin tin or round silicone mild with the batter just until under the rim.
  4. Place into oven and bake for 18-20 minutes or until ligh golden brown.
  5. Remove the Brazilian cheese popover bread from the oven and allow to cool for at least 15 minutes.
