This Älplermagronen, Swiss alpine macaroni and cheese recipe is super easy and quick to make and is super yummy. Älplermagronen (Älplermagroni) is Switzerland’s version of our North American Mac and Cheese but with a twist, Macaroni or Penni, Cheese, Potato, and Applesauce.

Ingredients For Älplermagronen Swiss Alpine Macaroni And Cheese

  • 2 large waxy potatoes (500 grams) peeled and cubed
  • 1/2 teaspoon salt
  • 250 grams Penne or Macaroni pasta
  • 1 1/2 cups Swiss Alpine cheese, grated or Gruyère cheese
  • 1 large onion sliced into small pieces
  • 6 bacon strips (200 grams) cut into small pieces
  • 1 tablespoon butter
  • 1 cup heavy cream  
  • 1/4 teaspoon nutmeg or allspice

Ingredients For Älplermagronen Homemade Applesauce

  • 4 apples ( Golden, Fuji, Granny Smith or McIntosh) washed, peeled, cored and cut into pieces
  • 1/4 cup water
  • 2 teaspoons sugar

How To Make Älplermagronen Homemade Applesauce?

  1. Add water, sugar and diced apples into a medium size pot, stir ingredients together and cover with lid.
  2. Cook on medium low heat for about 25 minutes or until apple are soft and tender.
  3. Mash the apples with a potatos masher or fork. You can also use and emulsion mixer for a smooth applesauce consistency.
  4. Transfer to a bowl, cover and set aside.

How To Make Älplermagronen?

  1. Add the bacon bits into a skillet and cook on medium heat for about 10 minutes or until fully cooked. Remove and set aside.
  2. Using the bacon skillet with the bacon fat in it, add the tablespoon of butter and onions and sautee on medium heat.
  3. In a meantime, fill a pot with water and add the potatos alond with the salt and cook on medium heat for about 15 minutes.
  4. Combine the penne or macaroni with the potatoes and cook until pasta is soft, about 15 minuts.
  5. Drain the water from the macaroni and potato and add the cream and cook for about 2 minutes on medium heat. Once the cream begins to heat up, add the cheese, a dash od salt and the nutmeg spice and stir totgther.
  6. Continue cooking for a bout 5 minutes or until the cheese has melted.
  7. Serve with caramlized sauteed onions and bacon bits.
