Preheat the oven to 175°C (350°F) and grease or line muffin pan with muffin liners.
Rinse and wash the Zucchini then grate it.
Grind half of the oats using a food processor or blender.
In a bowl, combine the grinded oatmeal flour, remaining oats, salt and baking powder and whisk togther.
Add the honey or maple syrup and melted butter or oil, and mix to combine using a saptula, then add the zuchinni and chocolate chip and fold into the batter.
Fill the muffin cups with the batter just to under the rim.
Place into oven and bake for 25-30 minutes.
Remove the zucchini oatmeal muffins from the oven, allow to cool in the muffin pan for five minutes then remove.
Place them on a wired rack and completely cool.
