Portuguese Bean Cake Recipe (Bolo de feijão)

A simple, classic traditional Portuguese bean cake recipe (Bolo de feijão) that is easy to make and rich in taste. This Portuguese chocolate bean is gluten free and made with just a few ingredients, it is quick to prepare and makes the perfect holiday dessert that will surprise everyone.

Ingredients
  

  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 5 large eggs
  • 2 1/2 cups red kidney beans canned or use white or black beans
  • 1/2 cup butter room temperature or 8 tablespoons
  • 2 teaspoons vanilla extract
  • 10 tablespoons cocoa powder or 1/2 cup plus 1 tablespoon

Instructions
 

  • Place the beans, sugar, one egg, and vanilla extract into a blender or food processor and blend until puree is achieved about 45-60 seconds.
  • Add the butter and blend until well combined.
  • Scrape the side of the blender or food processor, then add the 4 eggs, baking powder, baking soda, and cocoa powder and blend for 30 seconds or until the mixture is completely combined.
  • Preheat the oven to 180°C (355°F). Grease an 8-inch round cake pan with butter, bottom, and sides.
  • Fill the cake pan with the bean cake batter and tap the cake pan to even out the surface.
  • Bake for 35-40 minutes or until an inserted toothpick comes out clean.
  • Remove the bean cake from the oven and allow it to completely cool before serving.
  • You can serve it as is or dust it with some icing sugar.
