Simple Spring Salad (Radish, Cucumber, Avocado, Scallions)

Spring is here and so is one of my favorite Spring salads made without any lettuce. This healthy Spring salad is made with radish, cucumber, avocado, and scallions. Tossed together with a pinch of basil and salt giving you an amazingly delicious refreshing salad to enjoy for lunch or dinner.

Ingredients
  

  • 4 radishes
  • 1 scallion
  • 1 avocado
  • 1/2 cucumber
  • pinch of salt
  • pinch of dried basil

Instructions
 

  • Peel and cut the cucumber into 1/2 inch rings then cut into quarter pieces, and place into a bowl.
  • Carefully cut the radishes into small pieces or slices and combine them with the cucumbers.
  • Cut the avocado in half and remove the pit. Create slices about 1/4 inches vertically and repeat with the opposite side.
  • Add it to the cucumber bowl, Lastly, slice the scallion into small rings and combine with the salad, sprinkle some dried basil and salt, then toss it together.
  • Drizzle with your favorite dressing or enjoy as is. Optional, you can decorate with some parsley or cilantro.
