Combine 1 cup water, the butter, sugar, and salt in a small heavy saucepan and bring to a boil, stirring occasionally until the butter melts.
Turn the heat to low, add the flour at once and stir vigorously until the dough forms a ball.
Remove from the heat and add the eggs one at a time, constantly stirring.
Transfer to a bowl and allow the batter to rest for 15 minutes at room temperature.
Meanwhile, add the oil and heat in a deep fryer or pot.
Transfer the dough to a pastry bag fitted with a large star tip.
Pipe 4-inches-long strips of dough into the hot oil and cook for 2 to 3 minutes each side, or until light golden brown.
Transfer to plate with paper towels.
Repeat until batter is done.
Coat with sugar and serve.
