Ingredients
  

  • 10 tablespoon Unsalted Butter
  • 1 1/4 cup of All Purpose Flour
  • 2 tablespoon Sugar
  • 1/2 cup sugar for coating
  • Pinch of Salt
  • 4 Large Eggs
  • 6 cups Canola oil for deep-frying

Instructions
 

  • Combine 1 cup water, the butter, sugar, and salt in a small heavy saucepan and bring to a boil, stirring occasionally until the butter melts.
  • Turn the heat to low, add the flour at once and stir vigorously until the dough forms a ball.
  • Remove from the heat and add the eggs one at a time, constantly stirring.
  • Transfer to a bowl and allow the batter to rest for 15 minutes at room temperature.
  • Meanwhile, add the oil and heat in a deep fryer or pot.
  • Transfer the dough to a pastry bag fitted with a large star tip.
  • Pipe 4-inches-long strips of dough into the hot oil and cook for 2 to 3 minutes each side, or until light golden brown.
  • Transfer to plate with paper towels.
  • Repeat until batter is done.
  • Coat with sugar and serve.
