Portuguese Rice Pudding (Arroz Doce)

This Azorean Portuguese sweet rice pudding recipe was shared to me by my mother in-law. Easy to make, this arroz doce (rice pudding) is made with rice, milk, sugar, lemon rind, and garnished with cinnamon.

Ingredients
  

  • 1 cup white rice 200 grams
  • 1 cup granulated sugar 200 grams
  • 2 cups water 240 grams
  • 2 cups milk 240 grams
  • 5 egg yolks 100 grams
  • 1 lemon rind 15 grams
  • 1 teaspoon Cinnamon powder for decoration 5grams

Instructions
 

  • Rinse the rice and set aside.
  • Add two cups of water to a medium-size pot and bring to a boil.
  • Add in the rice and cook for about 20 minutes or until soft.
  • Once the rice is cooked, add the milk, sugar, and lemon rind and cook for 10 minutes stirring constantly until the rice pudding begins to thicken.
  • Pour in the egg and continue stirring for 5 minutes. When you notice the rice pudding thickening and bubbling at the surface then it ready.
  • Transfer the sweet rice pudding onto a servicing plate and spread to even out the surface.
  • Cool at room temperature for 30 minutes.
  • Decorate with cinnamon making the classic hashtag design that is traditional to Portuguese rice pudding.
  • Keep rice pudding covered and refrigerated until ready to serve.
