Easy Microwave Lemon Curd Recipe
In just 12 minutes, you can be enjoying an amazing silky creamy lemon curd using just your microwave. This no stovetop easy lemon curd recipe is the best lemon curd you'll ever have...believe me. - 2 egg yolks from large eggs 40 grams
- 1 cup granulated sugar 200 grams
- 3 large eggs 150 grams
- 2 tablespoon lemon zest from 2 medium lemons (12 grams)
- 1/2 cup of lemon juice freshly squeezed from the 2 lemons (120 grams)
- 8 tablespoons salted butter 115 grams
Add the lemon juice, eggs, egg yolks and sugar into a medium-size and beat together using a whisk until the mixture is well combined.
Add the butter and microwave using intervals of 45 seconds stirring in between each interval.
Repeat this process for about 8 minutes or until the lemon curd temperature reaches 80°C (175˚F). If you don’t have a thermometer, you’ll know the lemon is done when it coats the back of a spoon.
Once ready, carefully remove the lemon curd from the microwave and whisk until creamy and smooth.
Add the lemon zest and mix until combined.
Cool the lemon curd at room temperature for about 30 minutes, it will begin to thicken during the cooling stage.
You can cover it with plastic cling wrap or transfer it into a mason jar.
Keep stored in the refrigerator until ready to use.
