Portuguese Honey Sponge Cake

This delicious Portuguese honey sponge cake is easy to make and only about 45 minutes. No oil, No butter, no baking powder, just a few ingredients and you will make the fluffiest honey sponge cake.

Equipment

  • 2 Bowls

Ingredients
  

  • 100 grams of all-purpose flour 3/4 cups, sifted
  • 100 grams of sugar 1/2 cup
  • 85 grams honey 4 tablespoons or 1/4 cup
  • 100 grams 4 large eggs, room temperature
  • pinch of salt

Instructions
 

  • Preheat the oven to 175°C (350°F) and grease a cake bundt pan then lightly flour.
  • Add the eggs, honey, salt, and sugar into a bowl and beat on high until the mixture is light and fluffy about 8-10 minutes.
  • Combine the flour with the egg mixture in three separate portions folding it carefully in a circular motion from the top and working it through the bottom using a spatula.
  • Transfer the mixture to the bundt cake pan and bake for 30 minutes or until the internal temperature of the cake reaches above 96°C (205°F). You can also check if the sponge is baked by inserting a toothpick into the center, if it comes out clean, the cake is baked.
  • Once the sponge cake is baked remove it from the oven and allow it to cool for about 5 minutes before removing it from the cake pan.
  • Serve once the cake is completely cooled.
