VEGAN PASSION FRUIT COOKIE RECIPE
If you looking for a healthy vegan cookie without wheat flour or granulated sugar, then your going to love these vegan passionfruit cookies. These amazing delicious vegan passion fruit cookies are made with Passion fruit flour, Sprouted Wholegrain Flour, Coconut Sugar, Coconut Oil, Coconut Milk Passion Fruit Juice, Cocoa and Cinnamon.
- 1 1/4 cup passion fruit flour
- 1 1/4 cup sprouted wholegrain flour or use regular wholegrain or wheat wheat flour
- 1/2 cup coconut sugar
- 3 tablespoon passion fruit juice
- 4 tablespoon cocount oil
- 3/4 cups coconut milk
- 3/4 teaspoon cocoa powder
- 1/4 teaspoon cinnamon
Preheat the oven to 180°C (350°F) and line a baking sheet with parachment paper.
Combine all the ingredients into a bowl and using a spatula or a handmixer or planetary mixer, mix togther just until the cookie dough comes togther and your able to form a ball using your hands.
Once the cookie dough is developed, transfer it onto a flour work surface, dust with some flour and roll out using a rolling pin to about 1/2 inch in thichness.
Using a round cookie cutter, cut of pieces of cookies and place onto the lined baking sheet spacing them about 2 inches apart from each other.
Bake for about 15-18 minutes or until the edges are golden brown.
Remove from oven and allow to cool on the baking tray for about 5 minutes before transfering them onto a cooling wire rack. Allow passionfruit cookies to completely cool before serving.
You can keep your cookies stored in a covered container at ambiante temperature for up to one week.
