Ingredients
  

  • 1 1/2 cups 180 grams tapioca flour (or Cassava Flour)
  • 1/2 teaspoon salt 2 grams
  • 1/2 cup shredded mozzarella cheese or any fresh cheese
  • 1 large egg 50grams room temperature
  • 1/4 cup olive oil 55 grams or vegeatable oil
  • 1/2 cup milk 120 grams
  • 1/4 cup water 60 grams

Instructions
 

  • Preheat the oven to 200°C (395°) and spray a mini muffin pan or small round molds with cooking spray or add mini muffin liners.
  • Add the eggs, tapioca flour, milk, water, salt, olive oil, and shredded cheese into a blender and pulse until the batter is smooth.
  • Fill each mini muffin tin or small round mold with the batter just under the rim.
  • Place into oven and bake for 18-20 minutes or until ligh golden brown.
  • Remove the Brazilian cheese bread from the oven and allow to cool for at least 15 minutes.
