1 1/2 cups 180 grams tapioca flour (or Cassava Flour) 1/2 teaspoon salt 2 grams 1/2 cup shredded mozzarella cheese or any fresh cheese 1 large egg 50grams room temperature 1/4 cup olive oil 55 grams or vegeatable oil 1/2 cup milk 120 grams 1/4 cup water 60 grams
Preheat the oven to 200°C (395°) and spray a mini muffin pan or small round molds with cooking spray or add mini muffin liners.
Add the eggs, tapioca flour, milk, water, salt, olive oil, and shredded cheese into a blender and pulse until the batter is smooth.
Fill each mini muffin tin or small round mold with the batter just under the rim.
Place into oven and bake for 18-20 minutes or until ligh golden brown.
Remove the Brazilian cheese bread from the oven and allow to cool for at least 15 minutes.
