SIMPLE GLUTEN FREE VEGAN GINGERBREAD MEN COOKIES

This simple gluten free vegan gingerbread men cookies recipe is quick to prepare and taste amazing as is or with our famous vegan royal icing.

Ingredients
  

  • GLUTEN FREE GINGERBREAD MEN COOKIES
  • 400 grams gluten free flour (store bought or make a batch of my all purpose blend
  • 8 grams flax meal mixed soaked in 40 grams water
  • 60 grams granulated sugar
  • 3 grams salt
  • 120 grams vegan butter
  • 5 grams baking soda
  • 3 grams cinnamon powder
  • 5 grams ginger powder
  • 1 gram cloves
  • 160 grams fancy molasses
  • VEGAN ROYAL ICING
  • 125 grams icing sugar
  • 15 grams coconut or almond milk
  • 2 grams vanilla extract

Instructions
 

  • VEGAN ROYAL ICING
  • Combine in a small bowl the icing sugar, coconut milk and vanilla extract and mix together using a whisk.
  • If you want the Royal icing more thicker, add an additional teaspoon or two of icing powdered sugar and mix to combine.
  • GLUTEN FREE VEGAN GINGERBREAD MEN COOKIES
  • Add the vegan butter and beat with a hand mixer medium high speed for about 60 second or until soft. You can also use a stand mixer with the paddle attachment.
  • In a separate bowl combine the gluten free flour, salt, cinnamon, ginger, cloves and baking soda and whisk together to combine.
  • Divide half of the gluten free flour mixture into a bowl and add the molasses and soaked flax meal and beat together until combined.
  • Add the remaining flour and mix into the mixture using a spatula.
  • Divide the gingerbread cookie dough into two portions and shape into a ball. Slight flatten each cookie dough ball and cover with cling wrap and refrigerate for at least 2 hours or until the cookie dough is firm.
  • Preheat the oven to 190°C (375°F) and set oven rack to middle position.
  • Line a baking tray with parchment paper and set aside.
  • Divide the dough in half and create 2 balls. Place in a bowl, cover and chill for about 3
  • Sprinkle flour onto a working surface and roll out each dough to about 3mm in (1/8 inch) in thickness.
  • Cut out gingerbread men with cookie cutter and place onto tray with parchment paper separating them about 1 inch apart.
  • Place into oven and bake for 8–10 minutes or until the edges are golden brown.
  • Remove from oven and allow cookies to cool on baking pan or transfer to a wire rack after 5 minutes and allow them to cool there for at least 30 minutes before decorating.
