Easy Portuguese Milk Tarts Recipe (Queijadas De Leite)

These Portuguese milk tarts known as queijadas de leite in Portugal are super easy and quick to make, you can have a batch made up in just about 35 minutes.

Ingredients
  

  • 3/4 cup of all purpose flour 100 grams
  • 1 cup of granulated sugar (200 grams
  • 2 cups of milk 480 grams
  • 4 tablespoons melted unsalted butter 60 grams
  • 100 grams whole eggs 2 large eggs

Instructions
 

  • Gather and pre-scale all the ingredients, then pre-heat your oven to 185ºC (365ºF.
  • Combine the flour and sugar into a bowl and mix together with a whisk for about 30 seconds.
  • Add one egg and mix into the flour mixture just until absorbed about 10 seconds.
  • Now add the second egg mixing until the batter begins thickens.
  • Add the melted unsalted butter into the mixture and mix until well combined about 30 seconds.
  • Pour in the milk slowly, I poured 1/2 cup at a time, mixing in-between each addition.
  • The batter should be runny and have some bubbles at the surface.
  • Grease a muffin pan with cooking spray. You can dust some flour into the cavities of the muffin molds if you want but i just sprayed them.
  • Fill each of the muffin cup almost to the top of the muffin tins.
  • Bake in preheated oven of about 25-30 minutes or until golden at the top, these milk tarts took exactly 25 minutes to bake.
  • Remove from oven an allow to cool in muffin pan for about 15 minutes, this will allow the tarts to separate from the sides of the muffin pan so that they can be removed without being stuck. If you notice that some parts are stuck, use a butter knife or fork to loosen them away from the side walls.
  • Serve with some cinnamon powder or icing sugar.
