Easy Rock Cakes Recipe

Simple and quick to prepare, these easy rock cakes are a wartime classic. Without any effort, you can prepare these eggless rocks cakes including baking them in about 40 minutes, that quick and that easy!

Ingredients
  

  • 600 grams Plain Flour
  • 113 grams Milk
  • 300 grams Unsalted Butter
  • 15 grams Baking Powder
  • 150 grams Sugar
  • 6 grams Salt
  • 2 grams Allspice
  • 400 grams Raisins
  • ROCK CAKE RECIPE IN CUPS
  • 4.67 cups Plain Flour
  • 1/2 cup milk
  • 1.33 cups Unsalted Butter
  • 3 tsp Baking Powder
  • 3/4 cup Sugar
  • 1 teaspoon salt
  • 1 tsp Allspice
  • 2.67 cups Raisins

Instructions
 

  • Preheat oven to 200°C (392°F) and set rack into the middle position.
  • Line two baking sheets with parachment and set aside.
  • Place all the dry ingredients into the mixing bowl and whisk together.
  • Add the butter and rub it into the dry ingredient mixture until a crumb like consistency is developed.
  • Toss in the raisins and mix untill well combined.
  • Add the milk and mix togther using a spatula or fork just until the mixture comes together. If you find the mixture a bit dry, add another tablespoon or two of milk.
  • Spoon dollops of the cake batter onto baking tray separting them apart about 1 1/2 inch.
  • Bake one tray at a time, Place into oven and bake for 15-18 minutes or until golden brown.
  • Cool rock cakes before serving.
  • Optional, sprinkle some sugar onto top or dust with icing sugar.
