This delicious easy to make cheesy breakfast casserole with sausage and hash browns and eggs can be made fresh or make ahead the day before and just heat up in the morning.

Ingredients
  

  • 1 bag cubed hash brown 600 grams
  • 1 1/2 cup cheddar cheese
  • 1 cup mozzarella cheese
  • 1 pound Italian sausage 450 grams casings removed
  • 2 minced garlic cloves
  • 1 small yellow or red onion sliced into small pieces
  • 1 green yellow or red pepper, diced into cubes
  • 3/4 cup white mushrooms
  • 1 zucchini chopped up into small pieces
  • pinch of salt and black pepper
  • 8 eggs beaten
  • 2 tomatoes diced

Instructions
 

  • Preheat oven to 190°C (375°F).
  • In a medium-size skillet, add the sausage and cook on medium heat until browned. Remove the cooked sausage with a slotted spoon and transfer to a large bowl. Disregard half of the sausage fat in the pan.
  • Add the mushrooms, minced garlic, onion, peppers, and zucchini into the skillet with the sausage fat and saute for a few minutes, about 4-5 minutes, or until cooked.
  • Transfer the vegetable mixture into the sausage bowl, then add half of both kinds of cheese, hash browns, eggs, salt, diced tomato, and pepper and mix all together until combined.
  • Pour the mixture into the casserole pan and top with the remaining cheese.
  • Cover the casserole pan with aluminum foil and bake for about 35-40 minutes.
  • Remove from the oven and serve.
