Preheat your oven to 350F
In a mixing bowl, add the flour, salt and sugar and mix using a paddle attachment to combine for about a minute.
Add in the cubed butter and mix until a pea size crumble is formed. If you don’t have a mixing machine yo can use a food processor, just follow the same steps.
In an other bowl, add the eggs and milk and mix them together for about a minutes or so or until you see the dough forming and pulling away from the sides of the bowl.
Remove dough and place on lightly floured working surface.
Separate the dough in half and sheet down dough using a rolling pin to approximately 3mm or 10X12 rectangle
Using a pizza cutter or knife cut out each piece by 3X4 inch rectangles.
Brush the edges around rectangular pastry dough with water, this will help seal the edges of the pop tarts.
Fill one half with a dollop of strawberry jam and spread throughout avoiding the edges of the pastry.
Now place the other half onto the filled pastry and using a fork pinch the edges together.
Place onto parchment lined baking and bake for about 13-15 minutes or until lightly golden brown.
Once baked remove from oven and let them cool for 30 minutes before applying the frosting.
FOR THE FROSTING
In a bowl add the icing sugar, cream cheese, lemon juice and red food coloring and mix until smooth texture is achieved.
Add the frosting to the top of each pop tart.
